Sardines with lemon



And with the rest of the sardines, I cooked them with lemon, breadcrumbs and pinenuts. They are to be eaten another night or even frozen and enjoyed even later as I know from previous experience.

Ingredients 

1 lemon
25gr pinenuts
Breadcrumbs 
20 fresh filletted sardines




Mode

Preheat oven to 180c
Juice the  lemon
Arrange the sardines in an ovenproof dish
Sprinkle breadcrumbs over
Add the lemon juice
Sprinkle over the pinenuts
Bake in 180c oven for 30 minutes



Sardines pizza



Sardines!! Yum!! I have never made a pizza with fresh filleted sardines before (or any sardines for that matter). So Sunday night pizza friends this is one to have and repeat. I love sardines and this combination is delicious - πολύ νόστιμο! 



Ingredients

1 Wattle Valley wholemeal wrap
Sun dried tomato pesto
Ricotta
12 fresh filleted sardines 
6 black olives
Pinenuts



Mode

Preheat oven to 220c
Spread pesto on wholemeal wrap
Spoon on ricotta and spread evenly
Place sardines over pesto and cheese
Chop olives and sprinkle in middle
Sprinkle pinenuts over
Bake in 220c oven for 12 minutes
Enjoy on a Sunday (or any time).

Abla garlic chicken with pinenuts



As readers of this blog have no doubt noticed I love Abla’s recipe for garlic chicken wings, though I rarely cook it as she did. And in Melbourne lockdown how would I love to visit Abla’s restaurant, one of my long-time favourites! Instead at home with curfew I am experimenting, inspired by Abla.  I have been yearning for lemon potatoes but maybe that is overkill tonight. I must check the pasta store for orzo or the like.



 Ingredients

16 chicken drumettes (about 1 kilo)
2 dessertspoons rock salt
1/2 cup pinenuts
2 lemons
2 tbs crushed garlic
1 tbs crushed ginger



Mode

Preheat oven to 210c.
Arrange the chicken drumettes in a baking dish
Sprinkle with rock salt and pinenuts
Roast for 30 minutes
Meanwhile juice the lemons
Add minced garlic and ginger to juice
Stir thoroughly
Remove the chicken from the oven and pour the  mixture 
Return to oven and roast for another 25-35 minutes.
Serve with rice, pasta or roast vegetables

Sardines St Clements



Yesterday coming out of the fog and lack of appetite from AstraZeneca I had a delicious lunch of chilli sardines with orange and rocket salad. What a lovely way to get my appetite back and no wonder I was excited to find fresh filleted sardines on sale today!  

This is not really like the whole sardines I had yesterday but a variant of a recipe I found years ago in a book by Lorenza de Medici. The name is from the combination of lemon and orange in my recipe. I used ready-made breadcrumbs with lemon, pepper and parsley but you could use whatever you have. I ate mine with rocket and some potatoes I had previously roasted. Delicious! 




Ingredients 

1/2 orange
1/2 lemon
25gr pinenuts
1 tsp Sambal oelek
Breadcrumbs 
500 gr filletted sardines



Mode

Preheat oven to 160c
Juice the orange and lemon
Arrange the sardines in an ovenproof dish
Sprinkle breadcrumbs over
Add the orange and lemon juice
Sprinkle over the pinenuts and Sambal oelek
Bake in 160c oven for 40 minutes

Spanish style pasta sauce



 A couple of weeks ago when we were first allowed to meet people from another household in the open, I met my friends Penny and Mark in the rotunda at Darling Gardens one afternoon.  They very kindly brought me some garden produce, including silverbeet and coriander. When I was wondering what to cook the next evening I remembered a recipe I sometimes cook with sherry, mushrooms and pinenuts. Its origins are a bit obscured by the passing of time but my memory is that it was originally based on a tapas recipe that I read in a library book. Sometimes I cook it with ham but this time I added coriander, silverbeet and some chicken that I happened to have. As it was once a tapas you could eat it as such or by itself, but I had it with some pasta!  The serving is enough for one person.



Ingredients

1 leaf silverbeet
5 mushrooms
1 handful of pine nuts
1 clove garlic
1 stem coriander
1 spring onion
100 gr chicken cut for stirfry
1 sherry glass dry sherry
Olive oil

Mode

Heat some olive oil in a pan on the stovetop
Crush the garlic
Slice the spring onion
Add the garlic and spring onion to the oil and stir until covered
Slice the mushrooms and add
Chop the coriander and add
Add the pine nuts
All the while continue to stir
Add the sherry and stir
Chop the silverbeet including the stems
Add the silverbeet and the chicken to the mixture
Continue to stir until the chicken is sealed
Turn the heat down to a simmer
Cover and summer until the chicken is tender
Serve with rice, pasta or noodles.
